Mandel Broit

Ingredients:

  • 3 eggs

  • 1 cup granulated sugar

  • 1 cup vegetable oil

  • 1 tsp vanilla extract

  • 2 cups all-purpose flour

  • 2 tsp baking powder

  • 2 cups Rice Krispies cereal

  • 1 cup sliced almonds, toasted and chopped

Procedure:

  1. Preheat oven to 350 F. Line a cookie sheet with parchment.

  2. In a large bowl, beat eggs then beat in sugar, oil and vanilla.

  3. In a separate bowl, combine dry ingredients.

  4. Add dry ingredients, about 1/3 at at time, to egg mixture. The mixture will be a bit loose.

  5. Form mixture into 3 long loaves on prepared cookie sheet. Bake about 15 minutes until slightly golden on top.

  6. Remove from oven. lower temperature to 250 F

  7. While still warm, slice across with pizza cutter or sharp knife. Lay slices on sides; return to oven until slightly golden on bottom. Turn over slices and bake until slightly golden and dried, about an hour.

Yield: 4 dozen

Per piece: 102 calories; 7g fat, 2g protein, 10g carbohydrate, 13 mg cholesterol, 37 mg sodium


Avery's personal connection:

Mandel Broit is one of my grandmother's most requested recipes. She serves the cookies with dessert at our holiday gatherings. The cookies resemble biscotti in appearance, but they have a different texture. Mandel Broit is Ashkenazi Jewish dessert food.
